Sometimes the simplest preparations are the ones you reach for most. Boiled wontons drained and tossed with just three sauces: oyster sauce, light soy, and sesame oil. Chopped green onion on top. Done in 10 minutes flat.

The sauce ratio is what makes this work. Oyster sauce brings a thick, sweet-savory depth. Light soy adds salt without the heaviness of dark soy. Sesame oil ties everything together with its nutty, toasty aroma. Together they coat each wonton in a glossy, umami-rich glaze.

This recipe assumes you already have your wontons made or bought. Whether they’re pork, shrimp, or vegetable filled, the oyster sauce treatment works with all of them. The sauce doesn’t compete with the filling; it complements it.

Kitchen Tips

  • Boil in plenty of water. Two quarts for 40 wontons prevents them from sticking together and gives them room to float freely. Crowding makes them gummy.
  • Don’t overcook. Five minutes is enough for fresh wontons. They should be tender but still have some chew to the wrapper. Overcooked wontons fall apart.
  • Toss gently after draining. Wontons are delicate. Fold them into the sauce carefully with a spatula or chopsticks rather than stirring aggressively.
  • Use Lee Kum Kee or Megachef oyster sauce for the best flavor. Cheap oyster sauces taste artificial and overly salty. Quality matters when the sauce is the whole dish.

Variations

  • Chili oil kick: Drizzle 1 teaspoon of chili crisp or chili oil over the finished dish for a spicy Sichuan-style twist.
  • With fried garlic: Scatter 1 tablespoon of crispy fried garlic chips on top alongside the green onions for extra crunch and flavor.

Directions

In a large saucepan bring 2 quarts water to a boil.

Add won ton and boil for 5 minutes; then, remove with a Chinese strainer or colander.

Put the cooked won ton in a deep serving bowl, and add all other ingredients except the green onion, and mix carefully.

Garnish with the chopped green onion.
