Why would you not want to use vodka? The alcohol cooks off while it is baking, and the vodka gives the cake a distinct taste. What are you a prohibitionist, you must have voted for Bush.

I had the thought lavender may solve your problem. It may not be as crisp as vodka, but may add alot of depth. I've seen it used in all kinds of food recipes. FoodTV.com, etc. Research it and I hope this gives you an idea.
