A skinned 6-pound breast gets basted repeatedly with orange juice concentrate as it roasts, building a glossy, citrus-kissed glaze on the outside while keeping the meat impossibly juicy inside.
But the real showstopper is the relish: chopped fresh orange, thawed blackberries, brown sugar, and a splash of orange juice concentrate cooked down with cornstarch into a thick, jewel-toned compote that’s simultaneously tart, sweet, and fruity.
Serve the sliced turkey on a lettuce-lined platter surrounded by fresh orange slices, with that gorgeous purple-orange relish spooned alongside.
It’s elegant enough for a holiday table and feeds a crowd of 15.
Chef Tips
- Baste frequently during the uncovered second hour to build up layers of that orange glaze
- Make the relish ahead and chill it; it thickens as it cools and the flavors deepen overnight
- Use a non-aluminum saucepan for the relish so the acid from the fruit doesn’t react with the pan
- Let the turkey rest a full 15 minutes before carving so the juices stay where they belong
Ingredients
Directions
With knife blade in processor, add chopped orange.
Process 1½ minute or until finely chopped.
Place chopped orange in a medium non- aluminum saucepan.
Add 2 teaspoons orange juice concentrate, brown sugar, cornstarch and thawed blackberries; stirring gently.
Place over medium-low heat and cook 7 minutes or until mixture thickens, stirring constantly. Place in a medium bowl; cover and chill.
Combine remaining ⅓ cup orange juice concentrate and ¼ cup water. Set aside.
Place turkey breast on a rack covered with cooking spray and place rack in a shallow rosting pan.
Insert meat thermometer into meaty portion, making sure it does not touch the bone.
Baste turkey breast with orange juice mixture.
Cover and bake at 325F for about 1 hour.
Uncover and bake turkey breast an additional hour or until meat thermometer registers 170F, basting frequently with orange juice mixture.
Place turkey brest on a lettuce lined serving platter; cover loosely with foil and let stand about 15 minutes before slicing.
Arrange orange slices around turkey slices and serve relish with turkey.
