When you cook a turkey in the microwave, the biggest problem is color. Microwaves don’t brown the way a conventional oven does, so the bird comes out pale and unappetizing. This quick basting mixture solves that. Butter melted with paprika and a touch of brown gravy mix (or Kitchen Bouquet) creates a golden, savory glaze that gives the skin the roasted look it would otherwise lack.

Three ingredients, 45 seconds in the microwave, and you’ve got a paintable baste. Brush it over the turkey before and during cooking. The butter carries the paprika and gravy coloring evenly across the skin, and the fat helps the surface crisp slightly even in the microwave’s moist heat.

The brown gravy mix is the color agent here. It darkens the butter just enough to mimic the Maillard browning you’d get from a conventional oven. Paprika adds both color and a mild, sweet spice flavor.
