Curry night doesn’t need hours of simmering or a mile-long spice list.

This 15-minute tuna fish curry leans on a clever trick: stir-fried apple adds natural sweetness that rounds out the curry powder and tomato sauce into something surprisingly rich.

A splash of apple juice ties it all together before the canned tuna goes in for a quick warm-through.

Spoon it over steaming rice and you’ve got a budget-friendly dinner that tastes like you tried way harder than you actually did.

Kitchen Tips

  • Use a firm apple like Granny Smith so it holds its shape when stir-fried rather than turning to mush.
  • Toast the curry powder in the oil for 30 seconds before adding the tomato sauce to bloom the spices and deepen the flavor.
  • Don’t break up the tuna too much when stirring. Bigger flakes give the curry better texture.
