A Thai-inspired marinade that balances sweet, salty, and aromatic in every drop. Soy sauce and oyster sauce create a savory base, honey adds sweetness, and fresh ginger, garlic, cilantro, and a bay leaf layer in the aromatics. Both lemon and orange zest bring a bright, citrusy top note that lifts everything.

The double citrus zest is what makes this marinade special. Lemon and orange zest together create a more complex citrus flavor than either one alone. The essential oils in the zest infuse into the soy and oyster sauce as the meat soaks, adding fragrance that survives the heat of grilling.

This is built for chicken on the grill, but it works on pork, shrimp, or firm tofu just as well. Five minutes to mix, then let the marinade do its work.

Chef Tips

  • Zest the citrus on a fine microplane. You want the colorful outer layer only, not the bitter white pith.
  • Marinate chicken for at least 1 hour, or up to 4 hours in the fridge. The soy sauce is salty enough that overnight can over-cure thin cuts.
