75 minThis quick bread is an unexpected combination that works beautifully. Sauteed Vidalia onions and sliced almonds baked into a slightly sweet batter scented with almond extract. No yeast, no rising time, just mix, pour, and bake for an hour.
The Vidalia onions get sauteed in butter until translucent before going into the batter. That pre-cooking softens them, mellows their bite, and releases their natural sugars so they add sweetness rather than raw sharpness to the bread.
Almond extract paired with a full cup of sliced almonds doubles down on the nut flavor. The extract gives the crumb a fragrant, marzipan-like quality while the sliced almonds add crunch and visual appeal throughout each slice.
Half a cup of sugar makes this bread lean sweet rather than savory, landing it in that versatile territory that works alongside a roast, spread with butter for breakfast, or sliced thin for tea sandwiches.
Kitchen Tips
- Cool the sauteed onions before adding to the batter. Hot onions can partially cook the eggs and create lumps
- The batter should be slightly lumpy. Overmixing develops gluten and makes the bread tough
- Cool the loaf completely before slicing. Quick breads crumble when cut warm
- This keeps well wrapped in plastic for 3-4 days, or frozen for up to 2 months
Variations
- Cheddar onion: Add ¾ cup shredded sharp cheddar to the batter for a cheesy, savory version
- Rosemary almond: Stir in a tablespoon of chopped fresh rosemary for an herbal note
- Caramelized onion: Cook the onions longer until deeply golden for a richer, sweeter bread
