Sometimes the simplest things are the most satisfying.

Lemon-flavored gelatin gets dissolved in boiling water, then stirred with cold water and frozen sliced strawberries until the berries thaw right into the mixture.

The lemon gelatin brings a tart, citrusy edge that plays off the sweet strawberries, giving you that sweet-tart balance the name promises.

Two hours in the fridge and it’s set, jiggly, and ready to serve.

Kitchen Tips

  • Stir until the gelatin is completely dissolved before adding the cold water. Undissolved granules mean a grainy texture in the finished jelly.
  • Use frozen berries straight from the freezer. They chill the mixture as they thaw, which actually speeds up the setting process.

Directions

Empty gelatin into boil, pour on boiling water, stiruntil completely dissolved.

Stir in cold water, strawberries, salt. Mix until berries completely thaw and separate.

Refrigerate until firm, about 2 hours.
