75 minThis Japanese-inspired lemon chicken packs serious flavor from a simple marinade of sake, light soy sauce, sugar, and sliced whole lemons with the onion.
After an hour-long soak, each breast picks up a bright citrus tang with savory depth from the soy.
The chicken gets dipped in beaten egg, shaken in flour, and pan-fried until golden and crispy on both sides.
Then the whole marinade, lemon slices and all, gets poured right back in to simmer until the sauce thickens and the chicken cooks through. The result is tender, tangy, and slightly sweet.
Pro Tips
- Slice the whole lemon thin, rind and all. The rind adds a pleasant bitter edge that balances the sweetness
- Stir the chicken occasionally during marinating so every piece gets equal time in the sauce
- Brown the chicken over medium heat, not high. You want a golden crust without burning the flour coating
- The marinade simmer at the end is key. It reduces into a glossy, flavorful pan sauce you’ll want to spoon over rice

Put onion in large bowl.
Cut the ends off the lemon, slice it and add to the onion.
Add the sugar, sake, and soy sauce; stir well.
Rinse and pat dry the chicken breasts, put them in the bowl and spoon the marinade over them.
Marinate them for an hour at room temperature, stirring occasionally to be sure that all pieces are more or less equally marinated.
In a dish or small mixing bowl, thoroughly beat the egg.
Put the flour in a plastic bag, dip a couple of the chicken breasts in the egg and shake them with the flour in the bag to coat them.
Heat the oil in the pan and add the floured chicken breasts.
Repeat until all the pieces are coated and in the frypan.
Brown the chicken on both sides over medium heat (it should take about 20 to 30 minutes) and then add the marinade and simmer until the chicken is well cooked, perhaps another 30 minutes.
