70 minForget those plasticky store-bought fruit roll-ups. This homemade version uses real strawberries and rhubarb, simmered down and pureed into a smooth, vibrant paste that dries into chewy, pliable strips.
The rhubarb brings a tart punch that keeps the sweetness in check, and the whole thing comes together with just four ingredients. No preservatives, no mystery flavors, no weird colors.
Use a dehydrator if you have one, or your oven set to its lowest temperature works just fine. Roll them up in parchment paper for the ultimate lunchbox snack or hiking trail treat.
Pro Tips
- Chop the rhubarb as finely as possible so it breaks down quickly during the simmer.
- Blend the mixture until completely smooth. Any chunks will create thick spots that dry unevenly.
- Pull the leather from the parchment while it’s still warm. Once it cools, it can stick and tear.
- The leather is ready when it feels tacky but peels away cleanly. If it cracks, it’s over-dried.

Directions
Combine finely chopped rhubarb and water.
Simmer over medium heat for about 5 minutes.
Add strawberries and sugar.
Simmer another 5 minutes.
Purée mixture until smooth in a blender or food processor.
Dehydrate in a dehydrator or in oven.
- To dry in an oven just set temp at lowest possible setting --about 140 degress would be good.
Dry until fruit feels leather like ;yet pliable.
This would probably best be done on parchment paper, Remove the leather while it is still warm and roll it up.
