These homemade strawberry popsicles taste like a creamy fruit bar from the ice cream truck, but with real fruit and a fraction of the fat. Frozen strawberries blended with skim milk and a touch of sugar give you a smooth, scoopable base, and the unflavored gelatin is the secret ingredient that keeps the texture creamy instead of icy.

Gelatin prevents the large ice crystals that make homemade popsicles grainy and hard. Sprinkle it over cold milk first so it hydrates evenly, then dissolve it completely with boiling water before blending. If you skip the blooming step, you’ll get rubbery gelatin flecks throughout.

Wait until the mixture is partially frozen (about an hour) before inserting the sticks. If you put the sticks in while the mixture is liquid, they tip sideways and freeze at odd angles.

Kitchen Tips

  • Use frozen strawberries straight from the freezer. They chill the mixture as it blends, which gives you a head start on freezing and a thicker pour.
  • Blend on high until completely smooth. Any remaining fruit chunks will freeze into hard, icy bits.
  • Paper cups work great as molds and peel right off. No twisting or running under hot water needed.
  • Let finished pops sit at room temperature for 2 minutes before eating. They soften just enough to pull cleanly from the cup.

  • Swap strawberries for frozen raspberries, blueberries, or a mixed berry blend.
  • Use whole milk or coconut milk for richer, creamier pops.
  • Reduce the sugar and add a ripe banana for natural sweetness instead.

Directions

In blender, sprinkle unflavored gelatin over cold milk; let stand 2 minutes.

Add boiling water and process at low speed until gelatin is completely dissolved, about 2 minutes.

Add strawberries and sugar; process at high speed until smooth.

Pour into 8 (5 ounce) paper cups (or you can use plastic popsicle molds) until partially frozen, about 1 hour.

Insert wooden ice cream sticks; freeze until firm, about 4 hours.

To serve, let stand at room temperature 2 minutes; tear away cup.
