Frozen strawberries blended with skim milk and a touch of sugar give you a smooth, scoopable base, and the unflavored gelatin is the secret ingredient that keeps the texture creamy instead of icy.
Gelatin prevents the large ice crystals that make homemade popsicles grainy and hard. Sprinkle it over cold milk first so it hydrates evenly, then dissolve it completely with boiling water before blending. If you skip the blooming step, you’ll get rubbery gelatin flecks throughout.
Wait until the mixture is partially frozen (about an hour) before inserting the sticks. If you put the sticks in while the mixture is liquid, they tip sideways and freeze at odd angles.

Directions
In blender, sprinkle unflavored gelatin over cold milk; let stand 2 minutes.
Add boiling water and process at low speed until gelatin is completely dissolved, about 2 minutes.
Add strawberries and sugar; process at high speed until smooth.
Pour into 8 (5 ounce) paper cups (or you can use plastic popsicle molds) until partially frozen, about 1 hour.
Insert wooden ice cream sticks; freeze until firm, about 4 hours.
To serve, let stand at room temperature 2 minutes; tear away cup.
