Unflavored gelatin gets dissolved in cold water over low heat, then stirred together with vanilla ice milk, drained crushed pineapple, and thawed frozen strawberries. Pour it into individual dishes, slide them into the fridge, and let the gelatin work its quiet magic.

What you get is somewhere between a fruit salad and a frozen dessert: creamy, fruity, and just firm enough to hold a spoon shape. It’s the kind of thing you can feel good about having after dinner on a weeknight.

Directions

Sprinkle gelatin over cold water.

Place over low heat, stirring constantly until gelatin dissolves.

Drain pineapple and thaw strawberries.

Add ice milk and fruits.

Refrigerate until serving time. Do not freeze.
