Strawberry, Chocolate, & Cheese Parfait

A 10-minute dessert for two: sweetened ricotta studded with mini chocolate chips, layered with strawberry liqueur-soaked berries in stemmed glasses. Lighter than it looks and ready in a flash.

Part-skim ricotta gets stirred with a touch of sugar and whipped cream, then folded with mini chocolate chips for little pops of sweetness in every spoonful. The strawberries take a quick bath in strawberry liqueur to pull out their juices and add a subtle boozy warmth.
Layer the ricotta mixture into long-stemmed glasses, top with the glistening berries, and serve immediately or chill for later.
It’s elegant enough for company, light enough that you won’t feel weighed down, and simple enough that you could make it on a Tuesday.

In small mixing bowl combine strawberries and liqueur, set aside.
Using a fork, in separate small mixing bowl combine cheese, sugar, and cream, fold in chips.
Into each of 2 long-stemmed glasses or individual dessert dishes spoon half of the cheese mixture, then top each with half of the strawberry mixture.
Serve immediately or cover and refrigerate until chilled.
