1This is a low-effort vegetarian main that runs heavy on protein and skips the crust entirely. Two eggs, cottage cheese, cheddar, and a handful of whole-wheat flour bind a pound of spinach into something that slices into squares like a savory frittata-meets-quiche.
The cottage cheese is the trick most people don’t know about. It melts into the bake and keeps the texture loose and tender instead of dense like a baked omelet. You get a nutritional protein bump without adding cream or heavy dairy.
Draining the spinach is the make-or-break step. Frozen chopped spinach holds an absurd amount of water, and skipping the squeeze means a soggy bake with a puddle on the plate. Press it dry in a clean kitchen towel before it goes into the bowl.

Beat the eggs and wholemeal flour together in a large bowl.
Add the spinach, cottage cheese, cheddar cheese and black pepper.
Spoon the mixture into a well greased large oven proof dish.
Bake in the oven at 350℉ (180℃). for about 45 minutes.
Leave to cool for at least 5 minutes before serving.
