This is a low-effort vegetarian main that runs heavy on protein and skips the crust entirely. Two eggs, cottage cheese, cheddar, and a handful of whole-wheat flour bind a pound of spinach into something that slices into squares like a savory frittata-meets-quiche.

The cottage cheese is the trick most people don’t know about. It melts into the bake and keeps the texture loose and tender instead of dense like a baked omelet. You get a nutritional protein bump without adding cream or heavy dairy.

Draining the spinach is the make-or-break step. Frozen chopped spinach holds an absurd amount of water, and skipping the squeeze means a soggy bake with a puddle on the plate. Press it dry in a clean kitchen towel before it goes into the bowl.

A five-minute rest after baking lets the eggs finish setting, which gives you clean squares instead of a wobbly mess. Forty-five minutes at 350°F (175°C) hits the sweet spot for the size called out here.

Kitchen Tips

  • Squeeze the spinach hard. Twist it in a towel over the sink until almost no water comes out.
  • Use sharp cheddar instead of mild for more pronounced flavor. Reduced-fat works without losing much.
  • Grease the dish generously. The eggs grip the sides and tear if you skip this.
  • These reheat well. Cool, refrigerate, then warm in a 300°F (150°C) oven for ten minutes.

Variations

  • Stir in sautéed mushrooms or chopped sun-dried tomatoes for extra body and flavor.
  • Add a pinch of grated nutmeg, which is a classic pair with both spinach and cottage cheese.
  • Swap cheddar for crumbled feta and add chopped dill for a Greek-leaning spanakopita riff.
