Greek-inspired bread machine loaf marbled with spinach and tangy feta cheese, scented with nutmeg. Dense, moist bread perfect for sandwiches or soup.

This savory bread turns your bread machine into a Greek bakery, streaking whole wheat dough with vibrant green spinach and salty feta crumbles.
Nutmeg and black pepper add warmth without overpowering the cheese, while bran keeps the crumb tender and moist.
Slice it thick for meatloaf sandwiches or serve alongside egg-lemon soup for an authentic Mediterranean meal.
Pro Tips
- Squeeze spinach bone-dry in a towel or it will make the dough too wet and gummy
- Bring all ingredients to room temperature for proper rising and even texture
- Reduce water by 2 tablespoons in humid weather to prevent sticky dough
- Use the white bread setting for best results with the spinach addition
Ingredients
Directions
Defrost spinach overnight in refrigerator or microwave, but do not cook.
Wrap in dish towel or piece of clean old sheeting and tighten fabric around spinach to squeeze out all the liquid.
Bring all ingredients to room temperature and pour into bread machine, in order.
Set “baking control” at 10 o’clock.
Select “white bread” and push Start.
The green spinach running through this bread makes it look like marble.
The loaf is moist yet dense and fragrant with nutmeg and cheese.
Meat loaf or cold lamb make excellent sandwich fillings, or eat slices with chicken, egg-lemon, or beef and barley soup.
In hot and humid weather, use ⅛ cup less water.
