Texas-style spicy spareribs baked low and slow for 4 hours with lemon and onion slices, then glazed with spicy barbecue sauce. Fall-off-the-bone tender.
These spareribs cook the Texas way: low heat, long time, big flavor. The rack goes into the oven with sliced lemon and onion layered on top, covered, for the first two hours. That gentle steam tenderizes the meat and infuses it with citrus and onion from the inside out.
Then the lid comes off, the spicy Texas barbecue sauce goes on, and the ribs bake uncovered for another two hours. Brushing the sauce on two or three times during that second half builds up a sticky, caramelized glaze that darkens and concentrates with each coat.
Four hours sounds like a lot, but the oven does all the work. You just brush sauce and walk away.

Directions
Prepare Spicy Texas Barbecue Sauce and set aside.
Heat oven to 325℉ (160℃).
Place pork spareribs, meaty sides up, on rack in shallow roasting pan.
Place lemon and onion slices on pork. Cover and bake for 2 hours.
Pour 2 cups of the Spicy Texas Barbecue Sauce over pork.
Bake uncovered, brushing with the sauce 2 or 3 times, until done, about 2 hours longer.
Heat any remaining sauce and serve with the pork spareribs.
