110 minThis isn’t your everyday grilled steak, it’s a spice-crusted beauty that brings Indian aromatics to the backyard barbecue.
The rub of coarsely ground black pepper, earthy turmeric, fragrant cardamom, and caraway transforms a thick sirloin into something exotic and unforgettable.
Marinate it for at least an hour so the spices penetrate the meat, then grill it low and slow until it’s charred outside and juicy within.
Pro Tips
- Slash the fat edge to prevent curling but don’t cut into the lean meat
- Refrigerate the rubbed steak for 1-2 hours to let flavors penetrate deeply
- Grill over medium coals, not high heat, to prevent spices from burning
- Let steak rest 5 minutes after grilling before slicing for juiciest results
Ingredients
Directions
Slash outer edge of fat on beef steak diagonally at 1-inch intervals to prevent curling (do not cut into lean).
Mix together remaining ingredients.
Sprinkle on both sides of beef and lightly press into beef.
Cover and refrigerate at least 1 hour.
Grill beef 4 to 5 inches from medium hot coals, turning 2 or 3 times, until of desired doneness, 25 to 35 minutes for medium.
Cut into serving pieces.
