Carrots, cabbage, potatoes, and onions simmer in chicken broth with thyme until tender, then cubed Spam goes in for a savory, salty punch that turns a simple veggie soup into a meal.
But the real showstopper? Those cheese-topped croutons. Thick slices of sourdough bread slathered with a Swiss cheese, Parmesan, mayo, and green onion mixture, then broiled until bubbly and golden brown.
Float one on top of each bowl and you’ve got something that looks and tastes like it came from a bistro.
Pro Tips
- Use oven-proof bowls if you have them so the crouton melts right on top of the soup. If not, just broil the bread on a sheet pan and place it on top.
- Cut your vegetables into similar-sized pieces so everything cooks evenly.
- The soup thickens as the potatoes break down slightly. For a chunkier version, add the potatoes 10 minutes after the cabbage.

Directions
In 3- or 4-quart saucepan, sauté carrots and onion in oil over medium heat 5 to 10 minutes or until onion is golden.
Stir in broth, cabbage, potatoes, and thyme.
Bring to a boil. Cover. Reduce heat and simmer 30 minutes or until vegetables are tender.
Stir in meat.
Simmer 2 minutes.
Meanwhile, heat broiler.
In small bowl, combine Swiss cheese, mayonnaise, Parmesan cheese, and green onions.
Spread over each slice of bread.
Ladle soup into oven-proof bowls. (If bowls are not oven-proof, place bread slices on baking sheet and broil, then place on top of soup.
Top each with a bread slice. Place bowls on baking sheet.
Broil 3 minutes or until cheese mixture just begins to brown.
