When takeout takes too long, fire up the wok and make this instead.

Cubed SPAM goes into a screaming hot wok alongside broccoli, snow peas, red bell pepper strips, and chopped onion, all stir-fried until crisp-tender.

Then a sauce of teriyaki, Chinese hot chili oil, and ground ginger gets poured in, coating everything in sticky, spicy glaze.

Baby corn and mushrooms join the party at the end, and the whole thing gets spooned over steaming hot rice.

Kitchen Tips

  • Get the wok ripping hot before adding anything. That high heat is what gives stir-fry its signature sear and keeps the vegetables crunchy.

Directions

In a small bowl, combine teriyaki sauce, water, Chinese hot oil, and ginger; set aside.

In wok or large skillet, stir-fry SPAM, broccoli, onion, pea pods, and red pepper in vegetable oil 2 minutes.

Add sauce mixture, cook until bubbly.

Add baby corn and mushrooms; heat thoroughly.

Serve over hot rice.
