Italian bread grilled golden with sliced SPAM, Swiss and American cheese, Roma tomatoes, Dijon mustard, and green onions. This loaded grilled cheese hero sandwich is ready in 25 minutes flat.

This is grilled cheese all grown up.

Thick slices of Italian bread get loaded with Swiss cheese, sliced Roma tomatoes, SPAM, a slather of Dijon mustard, green onions, and a cap of melty American cheese.

Then the whole thing hits a buttered skillet and grills until both sides are golden and crunchy and all that cheese pulls into long, gooey strings.

It’s a 25-minute lunch that punches way above its weight class.

Kitchen Tips

  • Keep the heat at medium. Too high and the bread burns before the cheese melts through.
  • Slice the SPAM thin so it heats through quickly and crisps up against the bread.
  • Press the sandwich gently with a spatula while grilling for better contact and even browning.

Directions

Layer cheese and tomatoes evenly on 4 bread slices.

Lay SPAM over tomatoes.

Spread mustard on SPAM. Sprinkle with onion. Top with American cheese and remaining bread slices.

In large skillet, melt butter.

Add sandwiches and grill over medium heat until browned and cheese is melted, turning once.

Serve immediately.
