25 minSpam fajitas are the kind of pantry hack that earned its own loyal following in Hawaii and on Pacific Rim weeknight tables long before retro food trends caught up. Canned pork sliced thin and seared in a hot pan turns crispy at the edges, takes on a salty caramelized crust, and slides into a tortilla like a cured-meat dream.
The technique mimics traditional Tex-Mex fajitas almost exactly. Sliced green bell peppers and onions hit a hot dry skillet first, picking up some color and softening just enough to keep their crunch. The Spam goes in next, julienned for fast browning, then a splash of salsa pulls everything together with tomato-y heat.
Stack the warm tortillas with the Spam mixture, shredded lettuce, shredded jack or pepper jack cheese, a dollop of yogurt or sour cream, and extra salsa. The whole thing comes together in 25 minutes from pantry to plate, and the price-per-serving makes it a college dorm and busy-parent classic.
Kitchen Tips
- Slice the Spam thin and pat dry before searing, less moisture means crispier edges.
- Get the skillet smoking hot before adding ingredients, that’s how you build the fajita-style char.
- Use Greek yogurt in place of regular for a thicker, sour-cream-like dollop.
- Warm the tortillas directly over a gas flame for 5 seconds per side for char and pliability.
Variations
- Add a sliced jalapeño with the peppers for real heat.
- Swap Spam for sliced ham or bacon if you want a less salty cured-meat angle.
- Build it into a Spam fajita bowl over rice with black beans for a heartier dinner.
