Cubed SPAM and scrambled eggs get rolled up in flour tortillas with a generous pile of cheddar and Monterey Jack, then hit the oven just long enough for the cheese to go all melty and bubbly on top.

Pro Tips

  • Scramble the eggs just until they’re barely set. They’ll finish cooking in the oven and you don’t want them dry.
  • Use a mix of both cheeses inside the burrito AND on top for maximum melt coverage.

Directions

Heat oven to 400’F.

In bowl, beat together spam, eggs, and milk.

Melt butter in large skillet; add egg mixture.

Cook, stirring, to desired doneness.

Fill each tortilla with spam mixture and half of cheeses.

Roll burrito; place seam side down on 12×8” baking dish .

Sprinkle remaining cheese over top of burritos.

Bake 5 to 10 minutes until cheese is melted.

Serve with salsa.
