50 minBreakfast burritos just got a serious upgrade.
Cubed SPAM and scrambled eggs get rolled up in flour tortillas with a generous pile of cheddar and Monterey Jack, then hit the oven just long enough for the cheese to go all melty and bubbly on top.
They’re sturdy enough to hold in your hands and loaded enough to keep you fueled all morning.
Serve them with your favorite salsa and you’ve got a weekend breakfast the whole family will fight over.
Pro Tips
- Scramble the eggs just until they’re barely set. They’ll finish cooking in the oven and you don’t want them dry.
- Use a mix of both cheeses inside the burrito AND on top for maximum melt coverage.
- Make these ahead and freeze them individually wrapped. Reheat in the oven for a grab-and-go weekday breakfast.
