These sourdough muffins start with a sponge that ferments overnight. Flour and warm water sit unrefrigerated for at least eight hours, developing the tangy, yeasty flavor that defines sourdough baking.

The sponge gets mixed with more flour, sugar, and melted shortening, then goes straight into muffin pans. The sugar balances the sour tang, and the shortening keeps the crumb tender. No eggs, no milk, no leavener beyond what the natural fermentation provides.

Always save one cup of sponge back before mixing the batter. That reserved cup becomes your starter for the next batch, keeping the sourdough cycle going indefinitely.

Kitchen Tips

  • Let the sponge ferment at room temperature, not in the fridge. Cold temperatures slow the fermentation and you won’t get enough rise or tang.
  • The sponge should look bubbly and smell yeasty-sour after 8 hours. If it’s flat and smells off, start a new sponge.
  • Melted shortening should be warm, not hot, when mixed in. Hot fat can kill the active cultures in your sponge.
  • Bake until the tops are golden brown. Without eggs to set the structure, color is your best doneness indicator.

Variations

  • Cinnamon sugar tops: Sprinkle cinnamon sugar over the batter before baking for a sweet crust.
  • Savory option: Skip the sugar and fold in grated cheddar and chopped chives for a savory sourdough muffin.

INGREIDENTS: To set sponge--Add 2 cups flour and 2 cups warm water.

Let stand overnight or at least 8 hours.

(unrefridgerated) I: As much sponge as needed ( always save one cup) I: 1½ cups flour I: ½ cup sugar I: ½ cup Shortening (melted) INSTRUCTIONS: Mix ingredients well.

Put into muffin pan, Cook at 350℉ (180℃) until brown.

Turn out onto a rack to cool.
