Look, nobody’s pretending this is health food. It’s called Sinful Potatoes for a reason, and it earns that name with every gloriously cheesy, bacon-topped bite.

Melted Velveeta and mayonnaise get stirred together into a thick, creamy sauce, then mixed with frozen hash browns and spread into a baking dish.

Crumbled bacon blankets the top, and the oven does the rest, baking everything until it’s bubbly, golden, and impossible to resist.

Bring this to a potluck and you’ll come home with an empty dish and a dozen people asking for the recipe.

Pro Tips

  • Melt the Velveeta over low heat and stir constantly. It scorches fast and gets grainy if the heat is too high.
  • Use full-fat mayonnaise. Light or reduced-fat versions break down in the oven and won’t give you that rich, creamy texture.
  • Don’t thaw the hash browns completely. Slightly frozen potatoes hold their shape better and absorb less grease during baking.
  • Cook the bacon until it’s truly crispy before crumbling. Limp bacon on top steams in the oven instead of staying crunchy.

Directions

Preheat oven to 350℉ (180℃).

Melt velveeta in heavy pan over low heat, stirring.

Add Mayonnaise and potatoes to cheese and mix well.

Put into a 9×13 inch shallow baking dish and top with bacon.

Bake, uncovered for 35 to 40 min. until bubbly and golden brown.
