Ground beef, onions, and tomato paste form the savory base, while cream cheese and milk bring an unexpected creaminess that turns basic noodles into something rich and comforting.
Parmesan and chopped green bell peppers add sharpness and a fresh crunch to balance all that cheesy goodness.
The whole thing comes together in 30 minutes, entirely in the microwave, so there’s barely a dish to wash.
Kitchen Tips
- Break up the ground beef thoroughly while microwaving. Stirring every couple of minutes prevents big clumps and ensures even cooking throughout.
- Cube the cream cheese before adding it so it melts smoothly into the hot noodle mixture instead of leaving lumps.
- This works just as well on the stovetop if you prefer. Brown the beef in a skillet, cook the noodles separately, and combine everything in one pot.
- Leftovers reheat with a splash of milk to loosen them up. The cream cheese thickens as it cools, so a little extra liquid brings it back to life.

In a deep, 2-quart, heat-resistant, non-metallic casserole dish place noodles, the ¾ cup of water and the 1½ teaspoons salt.
Heat, covered, in Microwave Oven 8 minutes or until noodles are tender.
Drain noodles and set aside.
Place ground beef into a deep, heat-resistant, non-metallic 2-quart casserole dish and heat, uncovered, in Microwave Oven 5 minutes or until meat is no longer red.
Stir occasionally to break up meat particles.
Add onions and heat, uncovered, an additional 3 minutes or until onion is tender.
Drain excess fat.
Add tomato paste, the ¾ cup water, the ½ teaspoon salt, the pepper and the garlic salt to the beef-onion mixture.
Stir to combine.
Heat, covered, 1½ minutes or until mixture bubbles.
Add cooked noodles, milk, cream cheese, parmesan cheese and chopped green pepper.
Heat, covered, an additional 5 minutes or until mixture is heated through.
