Think of this as a laid-back Southern shrimp boil stripped down to the essentials. The shrimp cook in a fragrant beer broth loaded with onion, celery, bay leaf, peppercorns, and garlic, then chill right in that same liquid so they soak up all that seasoning as they cool.

The real move is boiling the broth for a full 10 minutes before the shrimp go in. That gives the aromatics time to infuse the beer, so by the time the shrimp hit the pot, they’re swimming in concentrated flavor. Five minutes is all the shrimp need. Pull them the second they turn pink because overcooked shrimp turn rubbery fast.

Chill the whole pot together and serve cold with bowls of ice-cold beer on the side for dunking. It works as a casual appetizer spread out on newspaper or as a main course on a sweltering summer evening.

Pro Tips

  • Don’t skip chilling the shrimp in the cooking liquid. That’s where the flavor absorption happens. At least 2-3 hours in the fridge does the trick.

  • Whole peppercorns give a slow, gentle heat. Cracked pepper would be too sharp here.

Directions

Combine all ingredients except shrimp in a large saucepan.

Cover, heat to boiling.

Boil 10 minutes.

Add shrimp. Cover and boil 5 minutes, or just until shrimp turn pink.

Remove from heat; chill in cooking liquid.

Serve cold with dunking bowls of cold beer.

Serve as appetizer or as a summertime main entree.
