Sautéed leeks go down first on olive oil-brushed dough, followed by garlic-herb goat cheese, thinly sliced Roma tomatoes, and fresh shrimp that get added halfway through baking so they stay plump and tender.
The goat cheese melts into creamy, tangy pockets against the sweet leeks and juicy shrimp. A final drizzle of good olive oil right out of the oven pulls it all together.
This recipe makes two 9-inch pizzas, so it works as a main course for two or an appetizer for a small crowd.
Pizza Tips
- Get the oven screaming hot. Crank it all the way up for a crisp crust with a slight char on the edges.
- Add shrimp at the 8-minute mark. They only need 7 to 8 minutes in the oven. Adding them at the start overcooks them into chewy little erasers.
- Use both white and green parts of the leeks. The green parts add color and a slightly more robust flavor that holds up to the strong goat cheese.

Directions
Preheat oven to 450F.
Using 1 tablespoon of the oil, sauté the leeks over high heat for 1 minute.
Salt and pepper lightly. Blend the goat cheese, garlic and 1 tablespoon of the herbs together with a fork.
Brush the rolled-out pizza dough with 1 tablespoon of the olive oil.
Spread the leeks over the dough.
Sprinkle with the goat cheese and top with a layer of tomato slices.
Bake pizza for 8 minutes. Add the shrimps to the pizza and continue baking the final 7-to-8 minutes.
To serve: dribble with remaining olive oil.
Makes 2 9-Inch Pizzas.
