Freshly shredded carrots get a quick simmer with concentrated orange juice, plump raisins, and just a whisper of cinnamon. The liquid cooks down into a glossy, citrus-kissed glaze that clings to every strand.

It’s bright, naturally sweet, and comes together in about 20 minutes with barely any effort. Serve it alongside roasted chicken, glazed ham, or grilled fish for a pop of color and flavor.

Kitchen Tips

  • Use a box grater or food processor. Thin, even shreds cook faster and absorb more of the orange glaze.
  • Don’t overcook. You want the carrots to have a little bite left, not turn to mush. Pull them when most of the liquid has evaporated.
  • Try golden raisins. They’re a bit sweeter and milder if you want a more subtle dried fruit flavor.

Directions

In a large non-stick saucepan or skillet with a lid, combine shredded carrots with remaining ingredients.

Simmer, covered, 3 minutes.

Uncover and simmer an additional 2 to 3 minutes, until nearly all the liquid is evaporated.
