Cold butter gets cut into flour, salt, and cayenne until it resembles coarse crumbs, then grated cheese and sesame seeds go in before soy sauce and cold water bring everything together into a workable dough.
The soy sauce is the ingredient that makes these unusual. It adds a salty, umami depth that plain salt alone can’t deliver, and it bridges the Western cheese flavor with the Asian sesame character. Just half a teaspoon, but you’d notice if it wasn’t there.
Rolled thin to ⅛ inch and cut into small rectangles with a pastry wheel, these bake fast at high heat: 8 to 10 minutes until lightly browned. They crisp up as they cool, so pull them when they’re golden, not dark.

- Use cold butter and cut it in quickly. Warm butter makes the dough greasy instead of flaky
- Add water sparingly, just until the dough barely sticks together. Too much water makes tough crackers

Combine flour, salt and pepper in medium bowl; cut in butter until mixture resembles coarse crumbs.
Stir in cheese and sesame seed.
Combine soy sauce and 3 teaspoons water; stir into dry ingredients.
Add more water, a little at a time, mixing lightly until dough begins to stick together.
Turn out dough and press together on lightly floured board or pastry cloth; roll out to ⅛ inch thickness.
Cut dough into 2 X 1 inch rectangles with pastry wheel or knife.
Place on lightly greased baking sheets and bake at 400℉ (200℃) 8 to 10 minutes, or until lightly browned.
Remove crackers to rack to cool.
