Five ingredients, ten minutes, no cooking. This sesame mustard rub punches well above its weight class as a quick marinade or dry-pan paste for nearly any protein, the kind of recipe to keep in your back pocket when there is no time to plan ahead.

The combination is built on contrast. Toasted sesame oil gives a deep, nutty richness that does not come from any other oil, while crushed mustard seeds add a sharp, slowly-blooming heat that builds rather than slaps. Crushed garlic anchors the savory side, lime zest and juice cut everything bright.

Mashing the ingredients together with a mortar and pestle (or a small bowl and the back of a spoon) bruises the mustard seeds enough to release their oils without grinding them to dust. You want some texture, the seeds give a satisfying tiny pop on the meat as it sears.

A quarter cup is enough to coat one or two pounds of meat. Spread it on, let it sit for at least 30 minutes (overnight is better), then grill, sear, or roast as usual.

Pro Tips

  • Use whole yellow or brown mustard seeds, not pre-ground mustard powder. The seeds bloom slowly and add textural pop, while powder gets too sharp too fast.
  • Toasted sesame oil (the dark golden-brown bottle) is what you want, light sesame oil lacks the depth this rub depends on.
  • Apply the rub to room-temperature meat for better penetration, fridge-cold proteins repel oil-based rubs.
  • Let the rubbed meat sit at least 30 minutes before cooking, preferably 2 hours, so the flavors penetrate.

Variations

  • Add 1 teaspoon of grated fresh ginger for a more aggressive Asian flavor profile.
  • Stir in a teaspoon of soy sauce or tamari for deeper umami and a subtly darker color on the cooked surface.
  • Add a pinch of red pepper flakes or a small split chili for heat lovers.
