This stripped-down version of Scotch eggs keeps things dead simple: hard-boiled eggs, sausage meat, and hot oil.

No breading, no fuss, just a quarter-pound of sausage wrapped around each egg and fried until the meat is browned and crispy on all sides.

Chilling them in the fridge before serving helps the sausage set and makes them easier to slice cleanly in half.

Serve them cold on a bed of lettuce for picnics, or warm for a hearty breakfast or snack.

Directions
