30 minScalloped asparagus wraps tender spears in a rich, sharp cheddar cheese sauce and layers them with toasted almonds for crunch. It’s a retro side dish that turns asparagus into something closer to a gratin than a simple vegetable course.
The cheese sauce starts as a basic white sauce: butter, flour, and milk cooked until thickened, then sharp cheddar stirred in until melted. Using very sharp cheddar is what keeps this from tasting bland. Mild cheddar would disappear under the asparagus flavor. You want that bite.
Building in layers matters. Asparagus, almonds, sauce, then repeat. The layers ensure every forkful gets cheese and crunch rather than all the almonds sinking to the bottom or all the sauce pooling on top.
The microwave makes this genuinely fast. From melting butter to a fully heated casserole in about 15 minutes of actual cook time.
Pro Tips
- Thaw the frozen asparagus and pat it dry before layering. Excess water will thin out the cheese sauce.

Ingredients
Directions
In a 1-quart, heat-resistant, non-metallic measuring cup place butter.
Heat, uncovered, in Microwave Oven 1 minute or until melted.
Stir in flour and salt until smooth.
Gradually add milk, stirring constantly.
Heat, uncovered, in Microwave Oven 5 minutes or until thickened and smooth.
Stir occasionally.
Stir in cheese until melted.
Place 1 package of asparagus in a deep, 2-quart, heat- resistant, non-metallic baking dish .
Sprinkle ½ of toasted almonds over asparagus.
Pour half of sauce over almonds.
Repeat layers with remaining asparagus, almonds and sauce.
Heat, uncovered, in Microwave Oven 8 to 10 minutes or until heated through.
Before serving, sprinkle with paprika, if desired.
