10 minA salt-free spice blend you can make in 10 minutes that actually tastes like something. Garlic powder, basil, oregano, star anise, and powdered lemon zest ground together create a surprisingly complex seasoning that works on fish, chicken, vegetables, and rice.
The star anise is the surprise ingredient here. It adds a faint licorice warmth that your brain reads as depth and complexity, filling in for the flavor-boosting role that salt usually plays. You won’t taste licorice, but you’ll notice the blend tastes fuller and more interesting than most salt-free mixes.
Grind everything together in a coffee grinder or blender until it’s a fine, even powder. A coarse grind won’t distribute as well and you’ll get random hits of one spice instead of a balanced blend.
Chef Tips
- Store in a dark glass container away from heat and light. Spices lose their punch fast in clear jars on the counter
- Drop a few grains of raw rice into the container to absorb moisture and prevent clumping
- Make a double or triple batch and keep it by the stove. You’ll reach for it constantly
- Use a dedicated coffee grinder for spices so your morning coffee doesn’t taste like garlic
Variations
- Add ½ teaspoon of smoked paprika for a deeper, smokier profile
- Include a teaspoon of onion powder alongside the garlic for a more rounded allium flavor
- Stir in a pinch of cayenne or crushed red pepper if you want a little heat
