2 hrsThis classic Italian lemon ice delivers pure citrus refreshment with nothing but water, sugar, and loads of fresh lemon.
The zest simmers with the sugar syrup to extract every drop of aromatic lemon oil before the tart juice gets stirred in.
Freeze it in your ice cream maker for those icy crystals that melt on your tongue like frozen sunshine.
Kitchen Tips
- Use fresh-squeezed lemon juice, bottled just doesn’t have the same bright flavor
- Strain out the lemon zest after simmering so the texture stays smooth and icy
- Don’t boil the mixture once you add the lemon juice or it will turn bitter
- Serve immediately after churning for the best texture, or store in the freezer and let soften 5 minutes before scooping
