10 minHere’s a no-fuss, no-bake treat that’s as fun to make as it is to eat, especially with little helpers in the kitchen. Bright blue raspberry jello sets around fresh blueberries suspended right through it, finished with a cloud of whipped cream.
The one trick that makes it work is patience. Let the prepared gelatin chill until it’s just starting to thicken and gel, an hour or two, before you stir in the berries. Add them too soon to fully liquid jello and they’ll all sink to the bottom; wait for that syrupy half-set stage and they hang suspended throughout.
Chill it the rest of the way until firm, spoon on as much whipped cream as you like, and that’s dessert. Cool, jiggly, and studded with juicy berries.
Kitchen Tips
- Wait for the half-set stage before adding the blueberries. Folding them into thickened, syrupy jello is what keeps them floating instead of sinking.
- Use cold, dry blueberries. Rinse and pat them dry so they don’t dilute or cloud the gelatin.
- Spoon into clear glasses to show off the suspended berries and bright blue color.
- Add the whipped cream just before serving so it stays fluffy and doesn’t weep into the jello.
