15 minThis microwave chocolate mint sauce comes together faster than you can preheat an oven. Unsweetened chocolate melts into a silky base, then gets sweetened with sugar and corn syrup before a hit of mint extract gives it that cool, refreshing edge.
The whole thing takes about 15 minutes from start to finish, and you’ll end up with a thick, pourable sauce that clings to everything it touches.
Drizzle it over vanilla ice cream, swirl it into brownies, or pool it on a plate under a slice of cheesecake. It stores well in the fridge and reheats in seconds.
Kitchen Tips
- Stir every minute during cooking to prevent scorching on the bottom
- If you don’t have a candy thermometer, use the soft ball test: drop a bit into cold water and it should form a ball that flattens between your fingers
- Use evaporated milk instead of half-and-half for a slightly richer, more shelf-stable sauce
- Let the sauce cool for 5 minutes before adding the mint extract so the heat doesn’t cook off the flavor

Directions
Place chocolate and water in a deep, 1½-quart, heat- resistant, non-metallic casserole pot.
Heat, uncovered, in Microwave Oven 45 seconds or until chocolate is melted.
Stir to blend chocolate and water.
Add sugar, corn syrup and salt.
Heat, uncovered, in Microwave Oven 9 minutes or until a candy thermometer reaches 240? F.
(If a candy thermometer is not available, drop a small amount of the mixture into very cold water. The mixture should form a soft ball which flattens when removed from the water.)
Do not place thermometer in oven.
Stir every minute.
Gradually blend in cream and flavoring.
