1 hrsJefferson pie is one of those old Southern recipes that’s almost disappeared from modern cookbooks. It’s a spiced brown sugar custard filling loaded with chopped dates, raisins, and pecans, baked in a pre-baked shell and finished with a billowy meringue topping.
The filling sits somewhere between a chess pie and a pecan pie. Brown sugar gives it a deep caramel flavor, and the combination of cinnamon, allspice, and nutmeg adds a warmth that’s reminiscent of fruitcake but far more refined. The cream or evaporated milk makes the custard silky rather than dense.
Dates are what separates a Jefferson pie from its relatives. Without the dates and nuts, this same recipe goes by Kentucky pie or Arkansas pie. The dates add a chewy, toffee-like sweetness that makes it distinctly its own thing.
Kitchen Tips
- Use a pre-baked (blind-baked) pie shell. The filling is wet and sets quickly, so raw dough on the bottom would turn soggy.
- Beat the egg yolks thoroughly into the creamed butter and sugar. The filling relies on them to set, so they need to be well incorporated.
- Check for doneness by gently shaking the pie. The center should jiggle slightly but not slosh. It firms up as it cools.
- Make the meringue with the leftover egg whites. Beat them with a pinch of cream of tartar and sugar until stiff peaks form, then brown under the broiler.
Variations
- Without meringue: Skip the topping and serve slices with a dollop of lightly sweetened whipped cream instead.
- Bourbon Jefferson: Stir in a tablespoon of bourbon with the cream for a boozy Southern twist.

Preheat oven to 325℉ (160℃).
Cream together butter and brown sugar.
Beat in 4 egg yolks. Mix together flour and spices and then add.
Stir in cream, dates, raisins and nuts.
Fill the shell;bake the pie until set, about 30 minutes.
When cool take 2 or 3 egg whites and make a meringue as a topping.
The dates are not necessary but a nice extra;without them and the nuts it is called a Kentucky or Arkansas pie.
