Chicken Dopiazza (Indian Chicken Curry)

Ingredients

1 1/2 pounds chicken meat, cooked partially
2 medium onions thinly
2 tablespoons peanut oil
1/4 teaspoon garlic powder
1 tablespoon coriander seeds
1 tablespoon cumin ground
1/2 teaspoon turmeric ground
1 teaspoon ginger ground
1 tablespoon chili powder
1 teaspoon black pepper
1/2 teaspoon salt
1 can tomatoes, canned with juice

Directions

Partially cook chicken, cut in large bite size pieces.

Fry onions in oil in a large pan until they are golden brown.

Mix the garlic with the spices and a little pepper.

Add the spice mixture to the pan, fry spices with onions for 1 minute.

Add chicken and stir together for 1 minute.

Add tomatoes, break up solid tomatoes with fork to small size pieces.

Pour sufficient water in pan to cover the meat.

Bring to boil, cover and slowly simmer for 45 minutes then uncover and cook slowly for 60 minutes or until meat is fork tender Stir occasionally to prevent sticking.

Serve with Turmeric Rice or Regular Rice

Tuna Cakes with Dill Tartar Sauce

This recipe is easy, cheap, nutritious, and my four kids (age 1,2,4, and 5) all eat 2 or 3 of them each time I make it. The first time I made it, I had to double the recipe in a hurry because everyone ate so much. It's even good without sauce.
