Classic no-bake cookies: chocolate, peanut butter, and oats stirred together and dropped to set, no oven required. The fudgy, chewy stovetop treat everyone grew up on.

30 minThese are the cookies of childhood kitchens: chocolate, peanut butter, and oats that come together on the stovetop with no oven in sight. The whole recipe hinges on one moment, the boil.
Bring the sugar, cocoa, butter, and milk to a real rolling boil and hold it briefly. Too short and the cookies stay gooey and never set; too long and they turn dry and crumbly. Once it is right, pull it off the heat and quickly stir in the peanut butter, vanilla, and oats.
Drop spoonfuls onto wax paper and let them firm up at room temperature. That is it: no baking, just a little chemistry and timing.
Kitchen Tips
- Time the boil; about a minute at a full rolling boil is the sweet spot between set and crumbly.
- Work fast once the oats go in, since the mixture starts to firm up immediately.
- On humid days they can be slow to set, so give them extra time or chill them.
- Use quick oats for the classic soft texture, or old-fashioned oats for more chew.
Variations
- Swap the peanut butter for almond or sunflower seed butter.
- Add a handful of shredded coconut or mini chocolate chips.
- Stir in a spoonful of espresso powder to deepen the chocolate.
