25 minThese aren’t your typical drop cookies. The batter gets poured into a shallow pan, baked for just 10 minutes, then cut into strips and rolled in powdered sugar while still warm. The result is a chewy, dense bar that’s more confection than cookie.
No butter, no oil, no creaming step. Honey and beaten eggs form the base, which means these cookies get their moisture and chewiness entirely from the honey and the natural sugars in a full pound of chopped dates. The dates also add a caramel-like depth that refined sugar can’t replicate.
The batter is loose and pourable, more like a thick cake batter than traditional cookie dough. Don’t expect to scoop and drop these. The sheet pan method is faster anyway and gives you uniform pieces.

Combine honey and eggs.
Add flavoring. Sift flour, measure, and sift with baking powder and salt.
Add to honey and egg mixture. Add nuts and dates.
Mix thoroughly.
Pour into shallow, well-oiled pan.
Bake in moderate oven (375 F) about 10 minutes.
Cut in strips 1 inch wide and 3 inches long. Roll in powdered sugar.
