40 minThese date nut cookies are little pockets of goodness. A soft brown sugar cookie dough wraps around a thick, cooked filling of chopped dates and pecans.
The hint of cinnamon in the dough plays beautifully against the caramel sweetness of the date filling.
They’re assembled drop-cookie style, so there’s no rolling or cutting. Just spoon, fill, top, and bake until golden.
Pro Tips
- Cook the date filling until it’s thick enough to hold its shape on a spoon; runny filling means messy cookies
- Let the filling cool completely before assembling or it will soften the dough
- A small cookie scoop keeps the portions even and speeds up assembly
