Sugarless Applesauce Cake

Ingredients

1 cup raisins, seedless
1 cup fruit dried, diced
2 cups water
2 cups flour, all-purpose
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1 1/2 teaspoons cinnamon
2 large eggs beaten, or equilavent egg substitute
1 cup applesauce unsweetened
2 tablespoons artifical sweetener liquid
3/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup nuts chopped

Directions

Combine raisins, fruit and water in a saucepan; cook, uncovered, until water is evaporated and fruit is soft.

Set aside to cool.

Meanwhile, in a large mixing bowl, combine flour, baking soda, salt, nutmeg and cinnamon.

In another bowl, combine eggs, applesauce, sweetener, oil and vanilla.

Add nuts and reserved fruit mixture.

Stir into dry ingredients and blend thoroughly.

Pour into a greased 10 inch fluted tube pan (Bundt).

Bake at 350 degrees F for 35 - 40 minutes or until the cake tests done.

I'ver made this cookie for years. It's my kids favorite cookie. I make it every Halloween...decorate with powdered sugar frosting tinted orange and green...candy corn eyes and nose and a chocolate chip mouth. People ask where I bought them. They are so cute and extremely delicious! **** four stars
