1 hrsThis sheet cake takes apple desserts in a grown-up direction with a generous splash of brandy that soaks into the fresh fruit.
The batter comes together in one bowl without fussing with a mixer. Just stir together the dry ingredients studded with walnuts and raisins, blend in the wet, then fold in those brandy-kissed apples.
What emerges from the oven is tender, deeply spiced, and perfect for feeding a crowd.
Kitchen Tips
- Let apples macerate in brandy for at least 15 minutes before mixing; longer is better
- Use tart apples like Granny Smith to balance the sweetness
- Grease pan thoroughly since this cake has no leavening beyond the baking soda
- Cool completely before dusting with powdered sugar so it doesn’t melt into the cake
