This is the master sweet dough that home bakers pull out when they want to make cinnamon rolls, sweet breakfast rings, dinner rolls, or holiday breads like hot cross buns and kolaches. Enriched with butter, eggs, and non-fat milk powder, it bakes up soft, golden, and slightly sweet on its own.

The recipe starts with a two-package yeast bloom in warm water and a pinch of sugar, which kicks the rise into high gear. Dry milk, eggs, butter, salt, and flour join the mixing bowl, and the dough gets kneaded until smooth and elastic, about 6 to 8 minutes. A long first rise until doubled (around 2½ hours) gives the dough time to develop real flavor rather than just puff.

From there, the dough is ready for whatever shape you want to give it. Punch it down, roll it out, twist it, stuff it, or cut it into rolls. One batch yields enough for a large pan of cinnamon rolls, two dozen dinner buns, or one elaborate braided loaf.

Pro Tips

  • Heat the water to 105 to 115°F (40 to 46°C) before adding yeast. Too cold and the yeast is sluggish; too hot and it dies on contact.
  • Let the yeast sit 2 minutes until it looks foamy. No foam means dead yeast, and no amount of kneading will save the dough.
  • Knead with a light touch. Sweet doughs are tender, and over-flouring makes them tough. Keep hands and board lightly dusted.
  • Rise in a warm, draft-free place. The inside of an unheated oven with a bowl of hot water works well.
  • Punch down gently, not aggressively. A single fold-and-press removes excess air without deflating the dough completely.

Variations

  • Add 1 teaspoon of cinnamon or cardamom to the flour for pre-flavored dough ideal for morning buns.
  • Substitute brown sugar for granulated for a deeper molasses note.
  • Add grated lemon or orange zest for a fragrant citrus dough that works for tea rings and sweet braids.

Directions

Combine the water, yeast, and sugar in a large mixing bowl.

Let stand for 2 minutes.

Add the dry milk, eggs, butter, salt, and 2½ cups of the flour.

Mix until smooth, then beat for 2 minutes.

Stir in enough of the remaining flour to make a soft dough.

Turn the dough out onto a well-floured surface (using some of the remaining flour) and knead for 6 to 8 minutes until smooth and elastic, adding only as much flour as needed to prevent the dough from sticking.

Place the dough in a greased bowl; turn once to bring the greased side up.

Cover and let rise in a warm, draft-free place until doubled in volume, about 2½ hours.

Punch down the dough and turn out onto a lightly floured surface.

Use to make rolls, bread etc.
