This is what a salad looks like when you treat the platter like a canvas. Rows of bright orange mango chunks, pale artichoke heart slices, and red tomato wedges arranged on a bed of peppery watercress make for one of the most visually striking salads you can put on a table. It’s also entirely vegan and naturally fat-free.

The dressing skips oil entirely, which is unusual but intentional. The fruit and tomato bring enough natural moisture and richness that an oil-based vinaigrette would muddy the flavors. Instead, fresh lime juice cuts through with a generous third of a cup, and a quarter teaspoon each of ground coriander and allspice gives it that distinctly Caribbean warmth.

The 30-minute refrigerator rest is non-negotiable. It gives the lime juice time to start macerating the mango, softens the watercress slightly so it isn’t too aggressive, and lets the warm spices bloom into the citrus base.

Watercress is the unexpected hero. Its peppery bite balances the sweetness of the mango and keeps this from reading as fruit salad. Substitute arugula in a pinch.

Serve family-style on the largest platter you have. The composition is the whole point.

Kitchen Tips

  • Use a properly ripe mango. Underripe fruit stays starchy; overripe turns mushy on the plate.
  • Rinse the artichoke hearts well to remove the brine. Salt overload destroys the delicate dressing.
  • Slice tomatoes last. They release water fast and dilute the dressing if cut too early.

  • Add segments of pink grapefruit or orange for citrus bursts.
  • Swap mango for ripe papaya for a slightly more tropical note.
  • Top with toasted coconut flakes for crunch and additional Caribbean character.

Directions

Arrange watercress around the perimeter of a large platter. Arrange alternating rows of mango, hearts of palm and tomatoes to fill platter.

Combine lime juice, coriander and allspice in a small bowl. Cover and refrigerate at least 30 minutes before serving. Serve with extra lime wedges if desired.
