Quartered whole chicken starts over a slow charcoal fire for 15 minutes to build flavor and color, then moves to a baking dish where it gets basted with a honey-lemon glaze and roasted until cooked through.
The glaze is dead simple. Honey, lemon juice, and Worcestershire sauce do most of the work, with onion powder and garlic powder rounding things out. The Worcestershire gives the sweetness a savory backbone so it reads as balanced rather than candy-like. Baste generously because the sugars in the honey caramelize in the oven heat and form that glossy, slightly tacky coating you want.
Serve it over plain rice to soak up the pan juices. The drippings in the baking dish are basically a ready-made sauce.
Pro Tips
- Keep the charcoal fire low and slow. High heat will burn the skin before the inside cooks, especially on bone-in quarters.
- Don’t apply the honey glaze on the grill. Sugar burns fast over open flame. Save it for the oven stage where the heat is more controlled.
- Use a meat thermometer. Quarters are done at 165°F (74°C) at the thickest part of the thigh.
- Let the chicken rest 5 minutes after the oven so the juices redistribute.

Brush chicken with oil. Arrange chicken on rack over a slow charcoal fire, grill for 15 minutes, turning occasionally.
Combine honey with remaining ingredients, mix well.
Baste chicken with honey mixture and place in a baking dish and brush lightly with oil.
Place under a preheated 375℉ (190℃) F oven until the chicken is cooked.
Serve with rice.
