Skip the store-bought gravy packets and make your own from pantry staples. This DIY beef gravy mix combines flour, beef flavor base, cornstarch, ketchup, and basic seasonings into a paste that dissolves into water or milk and thickens into a rich, glossy gravy in minutes.

The ketchup is the ingredient that makes this taste like the commercial version. It adds a touch of sweetness, acidity, and color that beef base alone can’t replicate. Mix it into the paste thoroughly before adding the liquid, since ketchup is the stubbornest ingredient to blend smooth.

For the best flavor, stir the paste into a hot skillet that still has pan drippings from whatever meat you just cooked. Those browned bits dissolve into the gravy and add layers of real beef flavor that no packet can match. Without drippings, it still works, but the drippings are where the difference between good and great lives.

Kitchen Tips

  • Mix the dry ingredients and ketchup into a smooth paste before adding any liquid. Lumps at this stage turn into lumps in the finished gravy.
  • Add the water gradually while stirring constantly. Pouring it all in at once creates a thin, lumpy mess.
  • Use milk instead of water for a creamier, richer gravy that works well over mashed potatoes or biscuits.
  • This mix can be doubled or tripled and stored dry (without the ketchup and water) in a jar for quick gravy anytime. Add the ketchup fresh when you make it.

Variations

  • Mushroom gravy: Saute sliced mushrooms in the pan drippings before adding the paste and liquid.
  • Onion gravy: Cook diced onion until golden in the skillet first, then build the gravy on top.
  • Herb version: Add a pinch of dried thyme or sage to the dry mix for a more aromatic gravy.
