4 hrsThis ham and potato casserole takes leftover ham and turns it into something completely new with a ground meat-style approach.
Mixing ground ham with crushed cheese crackers and barbecue sauce creates patties that hold their shape during the long slow cook.
Potatoes and onions get a quick sauté in butter and oil to start the cooking process before they hit the crockpot.
A milk and cheese sauce poured over everything melts into the potatoes and creates a creamy base that ties the whole dish together.
Three to five hours on low is all it takes for the potatoes to become tender and the flavors to meld.
Slow Cooker Tips
- Sauté potatoes just until they start to soften but don’t let them brown or they’ll turn mushy in the slow cooker
- Use cheese crackers (like Cheez-Its) for the ham patty binding because they add extra cheesy flavor
- Season potatoes generously with paprika as directed because it adds color and subtle smokiness that complements the ham
