These crockpot stuffed peppers are the definition of dump-and-go: pack the pepper halves with a simple meatloaf mixture, stack them in your slow cooker, and walk away.

The peppers steam until tender while the meat stays incredibly juicy under a blanket of spaghetti sauce.

Come dinnertime, you look like a domestic hero.

Pro Tips

  • Choose peppers with flat bottoms so they stack evenly in the crockpot
  • Don’t skip browning the meatballs first if you have time, it adds depth
  • Swap in ground turkey or Italian sausage for different flavor profiles
