This pasta salad actually gets better the longer it sits, which makes it the ultimate make-ahead side.

Bow-tie pasta gets tossed with halved cherry tomatoes, sliced black olives, cucumbers, and peppery radishes. The lemon and sunflower oil dressing is bright, clean, and light enough to let every ingredient shine. Roasted sunflower seeds on top add a nutty crunch that pulls the whole thing together.

Make it the night before a barbecue, a potluck, or just a busy week. It holds up beautifully in the fridge and tastes even better on day two.

Variations

  • Add crumbled feta or shaved Parmesan for a salty, creamy element.

Directions

Combine salad ingredients.

Mix together dressing in jar and shake until blended.

Pour over pasta mixture and toss lightly. Chill several hours or overnight, stirring occasionally.

Sprinkle with additional sunflower seeds.
